Made some Chocolate Crackle cookies. A little healthier than usual. If I would have had Stevia instead of sugar and oat or almond flour instead of all purpose, they definitely would have been all the way healthy!
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsweetened Dutch-process cocoa
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons extra virgin olive oil
- 1 large egg, beaten lightly
- 2 spoonfuls of molasses drizzled around dry mixture
- 2 tablespoons confectioners' sugar plus additional for dusting hands
In a bowl (preferably metal) stir together flour, granulated sugar, cocoa, baking powder, and salt. Add the olive oil. Stir in egg until mixture and drizzle the molasses. Use a fork to mix all this together. If I would not have, it would have never worked.
Preheat oven to 400°F. and put some parchment paper down on a cookie sheet pan.
Spoon level teaspoons of dough onto a sheet of wax paper. Put 2 tablespoons confectioners' sugar in a small bowl and dust hands with additional. Roll each piece of dough into a ball and then in confectioners' sugar in bowl. Arrange balls 2 inches apart on baking sheet. Bake 8 to 10 minutes, or until cookies are just set. Cool cookies on racks(Or just let them sit there, like I did) :)

:P Lol, it looks good!! My fave type of cookis is chocolate chip and sugar.....but it is a no-no when you are on a diet :(
